The Tree of Trouble

 

Mesquite trees grow like weeds in the southwestern United States and northern Mexico. They form a thick brush that covers the landscape. There is more mesquite in Texas than anywhere else.

Mesquite sends down roots as deep as 40 feet. It sucks up the earth's moisture as if it were drinking through a straw. Water is in short supply in Texas. In very dry periods of the 1950's, hardly a single rain shower fell on parts of Texas. Grasses died, and cattle and sheep had little to graze on. Only the mesquite lived well.

To most ranchers in the Southwest, mesquite is definitely a menace. They burn it, poison it, and try to uproot it. But not everyone would like to see the end of this thirsty tree. For centuries, Southwesterners have known that mesquite smoke gives a delicious flavor to meat, seafood, and vegetables. Mesquite has a light, smoky taste. The wood is burned to make charcoal. The charcoal is then used in a grill for barbecuing.

Mesquite charcoal burns hotter and longer than other woods. It is supposed to be especially good for bringing out the flavor of strong-tasting foods like pork, rockfish, eggplant, and onions. Meat barbecued with mesquite is usually cooked very slowly to allow the delicate flavor of the wood to seep into the meat.

Eventually, people living outside the Southwest heard about cooking with mesquite and decided to try it. Orders for mesquite wood and charcoal began to pour into Texas. A wide variety of dishes cooked over mesquite are now appearing on many restaurant menus.
